 Hennessy Paradis was created by Maurice Fillioux in 1979 as a tribute to symphonic music. He compared the blend to ‘a symphonic orchestra’, as “classical music that takes you away and connects with your emotions.” The number of instruments in an orchestra is not necessarily a measure of its success, but rather the purity of sound it creates and the virtuosity of the conductor. The same is true for Hennessy Paradis, a union of exceptional Eaux-de-vie selected for their individual qualities to work together to create a harmonious and graceful cognac.

The first single varietal from Armand de Brignac, this 100% Chardonnay is crafted with fruit sourced from the Côte des Blancs and Montagne de Reims terroirs of Champagne. The current assemblage is a trio of vintages; 2009, 2010 & 2012. The first aromas of lightly buttered, baked pastry are followed by notes of pear, hazelnut and a hint of gingerbread. On the palate, flavors of exotic fruits such as guava, gooseberry and peach are complemented by sweet spice notes of cinnamon and vanilla. Fresh, mineral finish. Nikka Taketsuru's 17-Year-Old Japanese Pure Malt Whisky is a marriage of single malt whiskies distilled at the Yoichi and Miyagikyo distilleries. Once each of the whiskies has been distilled, they are aged for a minimum of 17 years before being vatted together in order to create Taketsuru Pure Malt Whisky. As a result of this vatting, Taketsuru 17 Year Old Pure Malt has a malty aroma, with hints of fruit salad, berries, and plantains. The aroma gives way to notes of vanilla, blood oranges, whipped cream, and milk chocolate on the palate, and leads to a finish with hints of bittersweet oak, cocoa, and fruit.

The new Dickel Bourbon Aged 18 Years is a bourbon that has been aged in charred oak barrels and blended to perfection. Hailing from the quiet hills of Cascade Hollow, the long aging process in our single-story rickhouses imparted Dickel Bourbon 18 Year Old with mellow yet complex flavors including deep notes of crème brulée and stone fruit.

 

Our House’s most famous wine was created in 1876 to satisfy the demanding tastes of Tsar Alexander II. The emperor asked Louis Roederer to reserve the House’s best cuvée for him every year. He was particularly fond of the House’s wine. To distinguish this cuvée, this exceptional champagne came in a flat-bottomed, transparent lead-crystal bottle. The new brand was named after this precious material, which is particularly transparent and luminous. Produced uniquely during the best years, when the Chardonnay (around 40%) and Pinot noir (around 60%) grapes have attained perfect maturity, Cristal is aged for 6 years in Louis Roederer’s cellars and left for a further 8 months after dégorgement.

It has a silky texture and fruity aromas, complemented by a powerful mineral quality with white fruit and citrus notes. THE TIDES HAVE TURNED

Matured in a slightly higher proportion of Oloroso Sherry casks, this sublime 19-year-old whisky is the epitome of an aged Ardbeg. Part of a highly sought-after and collectible Ardbeg series, Batch 4 is the latest expression. This sublime Traigh Bhan, like the bottles before it, was inspired by Islay’s Traigh Bhan beach (pronounced tri-van).

Ardbeg Traigh Bhan masterfully performs the impossible – balancing the lull and crescendo of its intense flavors. Bottled under a full moon, the tides have turned for this rare spirit as more menthol, and herbal notes rush the senses, with intense smoke left behind in its peaty wake.

Blood Oath Pact 8 features a combination of the finest bourbons Rempe could find, including a 14-year ryed bourbon and an 11-year red bourbon, as well as an 8-year ryed bourbon, finished in Calvados casks. Calvados is an apple or pear brandy from the Normandy region in northwestern France that is distilled from cider and aged for a minimum of two years in oak casks. These casks impart their unique aroma and flavor to make Blood Oath Pact 8 a one-of-a-kind pour. The Calvados cask will bring additional tasting notes characterized by slight apple on the nose, with hints of vanilla and cinnamon, as well as flavor notes of ripe apples, juicy pears, butterscotch, and even subtle hints of chocolate.

2022  Release Crafted to showcase complexity and depth, Rare Cask is drawn from the broadest spectrum of casks, 16 different types, ever identified by the Master Whiskey Maker. Rare Cask's rich mahogany-red whisky showcases two of The Macallan's greatest and most defining strengths - sherry-seasoned oak casks and natural color. Ruby red color. On the nose soft notes of opulent vanilla and raisin give way to a sweet ensemble of apple, lemon, and orange. All are balanced by a spicy quartet of root ginger, cinnamon, nutmeg, and clove. On the palate this spicy quartet is unwavering. Oak resonates, timeless, polished, and rich. Vanilla and chocolate lead the finale along with a light citrus zest. The finish is warming and woody.

In December 2012, Jack Daniel’s released an entirely new Whiskey which was very different from anything they had done before. Unaged Tennessee Rye was the first time in over 100 years that Jack Daniel had used a new grain recipe. This was a very limited release due to the remainder of the Rye Whiskey barrels being left to mature in the warehouses for a future release. Made available to the public with much anticipation and technically not part of a series, this is still the 1st of 3 Rye Whiskey’s that will be released by Jack Daniels. Other than this Unaged Tennessee Rye, there is also a Rested Tennessee Rye which was released in 2014 and an Aged Tennessee Rye which will be released at a future date.

2023-02 7 YR  125.5 Proof

The second release of the Booker’s Bourbon 2023 Collection is Booker’s Batch 2023-02 “Apprentice Batch.” This batch pays homage to the early days of my dad Booker Noe’s career – far before he was the Sixth Generation Master Distiller – when he first learned the art of making bourbon under the guidance of his cousin Carl Beam.

This current release of Rare Perfection is a story of relationships and serendipity. The barrels for Rare Perfection 14 and 15 were found in the back of a unique warehouse when the new owners took stock of their purchase. Due to mutual friends in the business, the principals of Rare Perfection received a call about these sublime casks. After sampling them without any information they were blown away and asked for specifics. Turns out these ancient casks were made of new charred oak and filled with a Waterloo, Canada distilled four grain bourbon mashbill. They then aged in the single level warehouse which maintained extremely cold temperature year round. Because of this atypical bourbon aging environment the interaction with the wood was dramatically slowed and the final result after 14 and 15 years is indeed, Rare Perfection.

The blue weber agave used to produce Cava de Oro Tequila Extra Añejo is harvested at 7 to 10 years, from both the Los Altos and Tequila Valley regions of Jalisco. Instead of using the familiar ex-bourbon American oak barrels for aging, the distillery utilizes ex-red wine French oak barrels, where this Extra Añejo spends 5 years maturing. The extra Añejo offering is aged five years versus the typical three year minimum which produces its dark amber color and a complexity on the nose which includes cinnamon, caramel, vanilla and nutmeg. TASTING:

Maker's 46 bourbon was first released in 2010 and was the first release of what would become to be known as Maker's Wood Finishing Series. In 2020, on its 10th anniversary, Maker's 46 Cask Strength was released and that has since become an annual release. So what is the 2023 version like? 

Nose: Vanilla, toffee, sweet cherry candy, light oak; moderate alcohol
👉🏻Taste: Sweet cherry candy, a bit of barrel char; toffee, brown sugar, oak, hint of milk chocolate
👉🏻Finish: White pepper spice, tangy cherry, tannins, barrel char and oak; long finish; moderate burn

The flavors really change quite a bit over the sip. The nose is like a rich Tootsie Roll with some cherry candy mixed in. Those flavors continue into the taste and transition to becoming spicier and tangier with noticeable char and tannins in the finish. Those seared French Oak staves contribute to many of these flavors. For me, the end result is just about perfect. This is a full, rich bourbon that I can easily sip on for hours.

Created in partnership with Nick Offerman, Lagavulin Offerman Edition 11 Year Old Islay Single Malt Scotch Whisky is a woody and peaty, fruity and spicy offering. The woody, peaty notes lead from the front, gently tingling the tongue in a cha-cha before fading to reveal a veritable waltz of sweet berry and orchard fruit notes. Aged in a mix of refilled and rejuvenated American Oak barrels, this whisky demands to be served in a traditional whisky glass, neat or with a little water. It takes time, but patience is our finest virtue and rushing good whisky is just not how we take care of things in Islay.

Batch 032 began with a balance of two sets of barrels: a selection of 5 and 6-year-old barrels with a creamy and tropical profile and a selection of 6, 7, and 10-year-old barrels vatted for their complex, old, woody character. These two sets of barrels were slowly blended over three months. A small group of spice-driven 7-year-old barrels with notes of cinnamon toast, coffee bean, and chocolate were then carefully added to complete the blend. The result is a decadent and rich bourbon with layers of spice and nuttiness.

FLAVOR NOTES

Focused squarely on fresh oak and grassy spirit, the aroma calls to mind chopping wood in the yard on a late summer’s morning. The palate is a similarly simple pleasure until a splash of water opens it up to reveal a massively textured whiskey: rich, and oily, it’s a trait that’s often described as “Kentucky chew.”

Appearance: Tawny.

​Nose: A wildflower meadow showing dandelion, nasturtium, and fennel. The floral qualities are intense and concentrated. Late summer fruits round out the profile, among them Rainier cherry, watermelon, and crushed apple. It all integrates seamlessly with aromas of fresh oak, cedar, and applewood, with just a hint of char. The overall impression is that of splitting wood out in the yard when the trees are laden with fruit and the flowers haven’t yet begun to fade.

​Palate: Cinnamon rolls arrive with rich, buttery brioche dough, gooey caramel, and a spicy kick of cinnamon. The spice quickly expands to include wasabi and ginger. It’s underpinned by a savory undertone of boiled peanuts and French butter.

​Finish: Quite crisp, with an initial burst of sea spray and lemonade. These fade to reveal lingering notes of raspberry eau-de-vie and pastis.

​With a few drops of spring water

Dilution wedges the concentrated floral notes further apart to reveal a whole new level of complexity. Lavender, lemon verbena, and pawpaw fill out the meadow. The palate transforms, with sugars and oils combined with fine tannin, light astringency, and spicy black peppercorn to create a massive, chewy mouthfeel. The finish, meanwhile, is like walking into an old spice shop with the commingled flavors of bitter orange peel, fennel seed, and turmeric.

Del Maguey San Luis Del Rio Mezcal Tequila

Hand-crafted by the tropical riverbed in the village of San Luis Del Rio where the Red Ant River flows. Agave: Espadín. Naturally fermented and twice distilled in wood-fired copper stills. The nose of roasted pineapple & bright citrus, the palate of mango, cocoa, dried chiles & a touch of salinity, a finish of cigar smoke & lots of fruit. 

DoubleWood 12 was launched in 1993, using a process designed by our Malt Master David Stewart in 1982, now commonly known as 'wood finishing'.    

To make The Balvenie DoubleWood, David Stewart MBE takes whisky that has spent at least 12 years in traditional whisky casks, American Oak ex-bourbon barrels and hogsheads, and moves it to Spanish oak ex-Oloroso sherry casks for an additional nine months. 

The whisky is then transferred to large oak vessels called “tuns” for 3-4 months to allow the whiskies from individual casks to “marry”.  

The Balvenie DoubleWood single malt whisky gains its distinctive character from being matured in two different wood types. Each stage lends different qualities to the resulting single malt whisky.  

The traditional casks soften and add delicate character, the sherry wood brings depth and fullness of flavour and the final few months in our tuns allow the whiskies to marry harmoniously.

Tasting Notes: aroma of citrus, honey and vanilla. Flavors of red fruits (particularly berries and plums) on the palate, along with hints of sherry, caramel and butterscotch. Finish is long and warming, with a slightly sweet touch. Non-peaty.

 Amps up the front-of-the-palate flavors of Maker's Mark. In other words, it's Makers with a lot more Maker's. But the higher alcohol content of our Cask Strength isn't the story here - it's the taste. More of the signature flavors of rich oak, vanilla, caramel, and spice.
